Matcha Mint Chocolate Chip Cookies
So many of us are trying to add more green to our diets, and matcha is the perfect way to do this! We often see matcha in beverages, but it works well in baking too. I use a little bit of monk fruit as a sweetener, my keto friends will be thrilled as it is zero calorie and zero glycemic. But the main reason I use it here is for the color, or lack there of. You can sub coconut sugar or even maple syrup, however they will impact the beautiful green color of your cookies. I’ve tested them all and they all taste great! This recipe also sneaks in a banana for added natural sweetness. These cookies are loaded with healthy ingredients so eat them any time of day guilt free!
Ingredients
1 c almond flour
¼ c coconut flour
1 t baking soda
½ t salt
3 T coconut oil (melted)
2 T monk fruit sweetener (I like Lakanto)
1 egg
1 t peppermint extract
1 banana (mashed)
1 ½ t Matcha powder, feel free to use more if you like the flavor (I like Matcha Love)
½ c cacao chips (enjoylife dark morsels work well here)
Instructions
Preheat the oven to 350°. In a small bowl mix together the almond flour, coconut flour, baking soda and salt.
In a separate mixing bowl, use a hand mixer to cream together the coconut oil, monk fruit, peppermint extract and egg until blended. Add the mashed banana and mix on high until smooth.
Add the dry ingredients to the wet ingredients. Manually mix together to make a batter. Add the matcha powder and mix in until the batter is uniformly green. Fold in the cacao chips.
Place tablespoon size portions onto a baking sheet and bake for 12 minutes. Cool completely before eating. Makes 12-14 cookies.
