Sweet Potato Chocolate Frosting
It’s decadent, it’s sweet and it’s healthy! Believe it: the sweet potato makes for a smooth and creamy texture. Use this frosting on your cakes, cupcakes or even as a dip for fresh fruit. This frosting favorite is vegan, gluten-free, dairy-free and even refined sugar-free!
If your kids are like mine, don’t tell them the main ingredient is sweet potato until after they’ve told you how much they like it! This frosting also works great on my quinoa chocolate cake!
Ingredients
1 ½ c canned sweet potato puree (you can always make your own)
3 T unsweetened cacao powder
1/3 c maple syrup
½ t salt
Instructions
Combine all of the ingredients in a blender and blend on high until smooth. Chill in refrigerator for an hour before icing your cake. Store in refrigerator for up to 3 days.
