Tangy Pear Vinaigrette Dressing

This simple pear-infused dressing will give any salad a unique flavor. Try it on my winter greens salad for a delicious healthy starter during a winter nights, winter lights dinner party!

Ingredients

  • 1 pear peeled, cored and chopped

  • 1 small shallot, diced

  • 1 T honey

  • 1 t Dijon mustard

  • 2 t fresh lemon juice

  • 1 T apple cider vinegar

  • ¼ c olive oil

  • ½ t salt

  • ¼ t ground pepper

Instructions

Put the first six ingredients in a mini food processor or blender. Puree thoroughly. Slowly blend in olive oil. Mix in salt and pepper. Store remaining dressing in refrigerator up to five days. Serves six.

TIP: Make vinaigrette up to two days ahead of serving. Store in a jar in the refrigerator.
