Avocado Cilantro Salad Dressing

This is my personal spin on the original recipe for green goddess dressing. It’s extra green because of the cilantro and extra creamy because of the avocado.

This delicious, nutritious dressing can be stored in a small mason jar in the refrigerator for up to a week. I like to add it to salads (especially my green angel salad), cauliflower rice or quinoa.

Ingredients

  • 1 ripe avocado, peeled and pitted

  • ½ c fresh cilantro

  • ½ c olive oil

  • juice from ½ of a lemon

  • 1 garlic clove

  • 1 t Italian seasoning

  • ½ c water

  • 1 T red wine vinegar

  • ½ t salt

  • ¼ t ground black pepper

Directions

Place all ingredients in a food processor or blender. Pulse until completely blended.

TIP: You can prepare this as a dip perfect for fresh vegetables and crackers by reducing the olive oil to ¼ cup and by adding another avocado.
