Easy Chickpea Bread

I gave up white bread a long time ago and never looked back. Why? Little nutritional value. We eat to nourish our bodies. And white bread made with refined flour lacks the fiber, protein and nutrients our bodies deserve. Plus, it does a number on your sugar levels! Instead, I made the choice to go gluten-free and love how I feel.

Often, I'll want a substitute for the traditional dinner role or dipper at my parties, particularly when I serve my popular three-cheese fondue. Chickpea bread to the rescue! It's super-easy to make and full of healthy ingredients. Your guests will be impressed with your healthy take on a break basket!

Ingredients

  • 1 can of garbanzo beans (including ¼ c of the liquid)

  • 2 eggs

  • 1 T honey

  • ½ t Italian seasoning

  • ½ t salt

Instructions

Preheat oven to 375°. Combine all ingredients in a blender. Allow batter to blend for a full minute. Place batter in a prepared loaf pan (I spray mine with olive oil). Bake for 45 minutes. Allow bread to cool completely before slicing. Serves 6-8.
