Cranberry Wild Rice Medley

This is the perfect side dish to celebrate autumn! Combine the unique wild rice grain with the golden raisins, cranberries, almonds and orange zest, and you’ve got a colorful tasty complement to a fall harvest dinner.

Ingredients

  • 4 c chicken stock

  • 1 c water

  • 2 cups wild rice blend (I use Lundberg)

  • ½ t onion powder

  • ½ t garlic powder(or granules)

  • 1 t Italian spices

  • ¼ t ground pepper

  • ½ t salt

  • 1 T olive oil

  • ½ c golden raisins

  • ½ c dried cranberries

  • ½ c slivered almonds

  • zest of 1 orange

Instructions

Bring the chicken stock and water to a boil. Add rice blend, onion powder, garlic powder, Italian spices, salt, pepper, and olive oil. Mix thoroughly, cover and reduce to a simmer for 50 minutes, stirring occasionally. Remove from heat, allow rice blend to cool for 10 minutes. Fold in raisins, cranberries, almonds, and zest. Mix well until all ingredients are combined. Serves 8*.

*TIP: You can prepare this dish before your guests arrive and leave covered on the stove. Heat up on stove just before serving. Alternatively, you can prepare it the day before and keep it refrigerated in a baker. Heat up in an oven while other dishes cook.
