Date Sweetened Frosting

This sweet, healthy treat is truly the icing on the cake! Use it as frosting on a dessert, or keep it in a jar in the refrigerator to use as a spread on toast or even a fruit dip.

Many of my recipes including my flourless chocolate torte, carrot cake cupcakes and this date sweetened frosting have a special ingredient that makes them smoother, moister and even a little bit healthier… apple sauce! This versatile food is a perfect substitute for vegetable oil, sugar and even eggs.

Ingredients

  • 1 cup of pitted dates (soaked in hot water until soft)

  • ¼ cup unsweetened almond milk

  • 1/3 c organic unsweetened apple sauce (special ingredient!)

  • ¼ c creamy almond butter (I love Justin’s almond butter made right here in Boulder!)

  • 2 t cacao powder

  • 1 T honey


Instructions

Combine all ingredients in a food processor and mix until smooth. Keep frosting at room temperature when using as a topping on a cake. Otherwise store it in a jar in the refrigerator for up to a week.
