Flavorful Cauliflower Rice with Fresh Lime and Cilantro
This tasty, healthy accompaniment is the perfect substitute for any gluten-free gathering and can be made ahead of time. My recipe with lime and fresh cilantro adds an extra flavorful kick. Pair it with my dutch oven roasted chicken with white wine sauce for a complete meal.
Ingredients
1 medium head of cauliflower riced (about 4 cups)
3 T olive oil
1 large shallot diced
2 cloves of garlic minced
1 t salt
¼ c fresh cilantro, chopped
Juice of 1 lime
Instructions
Heat oil in a large pot. Add shallot and garlic and sauté for 2 minutes. Add cauliflower and salt; continue to cook for 5 more minutes. Add cilantro and lime juice and mix well. Serves 6-8
TIP: This dish can and should be made ahead of time. One reason is for convenience, but the other reason is the smell. Not ideal for entertaining! You can make this 2-3 days ahead of time and keep it in the refrigerator, or you can make it and freeze it. Just reheat before serving.
