Grain-Free Fruit Pizza
Have you ever seen those recipes for sugar cookie pizzas? They look enticing but they are loaded with refined sugar and unhealthy fats. Enter my grain-free, healthy version! It is a guilt-free indulgence that’s fun to make and even more fun to eat.

Grain-Free Crust
Ingredients
½ c walnuts
1 ½ c almond flour plus more for sprinkling
2 T arrowroot powder
½ t salt
1 t cinnamon
¼ c raw honey
3 T coconut oil (not melted)
Instructions
Preheat oven to 350° and set out a piece of parchment paper on a flat surface. Place walnuts in the food processor and chop until nuts are a fine consistency. Add almond flour, arrowroot powder, salt, and cinnamon to the nuts. Blend on high until mixture is thoroughly combined, about 1 minute.
Add honey and coconut oil to the mixture in the processor and blend until a dough forms. Remove dough from the processor and form it into a disk shape on the parchment paper. Sprinkle the top of the disk with a dusting of almond flour, then roll it out with a rolling pin until you get a ¼ inch flat circle. Carefully place the parchment paper (with the rolled out dough on it) on a baking sheet. Put it in the oven and cook for 15 minutes. Allow crust to completely cool before carefully removing it from the parchment paper.
Sweet Cashew Cream Spread
Ingredients
1 c of raw cashews (soaked overnight)
½ c water
½ ripe banana (medium size)
Juice of ½ lemon (about 2 t)
3 T raw honey
Instructions
Place all ingredients in a food processor or powerful blender and blend until smooth. Store in a glass container in the refrigerator until you are ready to use it.
Toppings
1 c fresh strawberries (trimmed and sliced)
½ c fresh blueberries
Any additional fresh fruit of your choice (sliced kiwi, raspberries and sliced bananas all work well)
Assembly
Place prepared crust on a flat serving plate. Spread ½ cup of cashew cream on the crust and cover it evenly. Add fruit toppings in a design of your choice. Cut with a pizza cutter. Makes 8 servings.
