Not Your Mamma's Coleslaw
Hold the mayo and the dairy… this is not the coleslaw we grew up with! The dressing is light and refreshing and the salad is full of crunch and fresh flavor. This healthy and vibrant combination goes great with my healthy slow-cooker BBQ pulled pork or use it to add a punch of color to any meal.
Ingredients
Dressing
¼ c olive oil
2 T rice vinegar
1 t lemon juice
2 T pure honey
1 t celery seed
½ t salt
¼ t pepper
Coleslaw
3 c shredded red cabbage
3 c shredded white cabbage
1 c shredded carrots
¼ c fresh cilantro (chopped)
¼ c raw sunflower seeds
¼ c slivered almonds
¼ c golden raisins
Instructions
Combine all of the dressing ingredients and whisk thoroughly. Mix the cabbage mixture, carrots, cilantro, sunflower seeds, almonds and raisins in a salad bowl and blend with dressing. Serves 6-8.
