Winter Greens Salad with Pear Vinaigrette Dressing
Did you know that winter season greens taste better after a frost? The cold causes the plants to break down which leads to tastier flavors. And let’s not forget they’re a great source of vitamins A and C!
Add walnuts for crunch, cranberries for a touch of tart and finish with sweet, juicy pears both in their natural form and as part of a delicious vinaigrette. It’s the perfect starter for a winter nights, winter lights dinner celebration.
Ingredients
1 bunch kale stemmed and cut into small pieces
1 bunch swiss chard, cut into small pieces
1 bunch baby spinach (or any combination of greens totaling about 10 oz.)
½ c chopped walnuts
½ c dried cranberries
1 pear pealed and cut into slices
Instructions
Combine the first five ingredients in a large bowl. Massage about half of the vinaigrette into the salad. Save the rest. Plate salads and place sliced pears on each. Serve immediately. Serves 6.
