Copycat Bobo Bars
Boulder is a mecca for healthy foods, and countless natural and organic food brands have been born here. We feel very fortunate that the community is so supportive of these products. One of the products that started in a small manufacturing facility right down the street from my daughter’s school many years ago is the Bobo Bar. They are now a household name, and they disrupted the healthy bar inductry.
I’ve come up with my own recipe for chewy oat bars. They are great to have on hand for breakfast on the go or with a cup of coffee, for an afternoon snack with some tea, and perfect for the lunch box. Of course I sneak in some superfoods and I use all real ingredients. Try each of the different kinds!
Ingredients - Base
2 c gluten free whole grain oats
¼ c ground flax
2 t xanthum gum
Peanut Butter Chocolate Chip - wet ingredients
½ c peanut butter
½ c pure maple syrup
¼ c coconut oil
1 t vanilla
Add in:
½ c chocolate cacao chips (for those who are watching their sugar intake, try Lily’s)
Honey Almond Crunch - wet ingredients
1/2 c almond butter
1/2 c honey
1/4 c coconut oil
1 t vanilla
Add in:
1/2 c slivered almonds
Apple Spice - wet ingredients
1/2 c unsweetened apple sauce
1/2 c honey
1/4 c coconut oil
1 T cinnamon
1/2 t ground ginger
1/4 t nutmeg
1 t pumpkin pie spice
Add in:
1/2 apple diced
Instructions
Heat oven to 350º. Make the base first. Put the three base ingredients together in a bowl and mix well. In a separate bowl, combine the wet ingredients of the type you are making (all but the add in ingredient). Whisk together until they are completely blended. Mix the wet bowl into the dry bowl and combine together. Add the “add in” ingredient and fold in. Spred the mixture evenly in a prepared 8” x 8” baking dish. Bake for 20 minutes. Allow to cool completly before cutting and serving. Makes 16 bars.
