Watermelon Cherry Berry Salad
This fruit salad is fun to serve because it is so beautiful and colorful! But more importantly, it is packed with nutrients, rich in antioxidants, and full of anti-inflammatory benefits. The cherries, which are the star of the show here, offer a big dose of vitamin C. They also reduce symptoms of arthritis and they enhance exercise performance and recovery! Your family and your guests are going to love this one for so many reasons!
I serve mine with a lemon honey mixture to enhance the fruity flavor. I add it right before serving. Honestly, there is so much natural sweetness in this salad so adding that mixture is optional.
Ingredients
3 c pitted cherries
2 c cubed watermelon
1 c blueberries
1 c blackberries
1/4 c fresh chopped mint (save extra for garnish)
Juice of 1 lemon
2 T honey
Instructions
Add the cherries*, watermelon*, blueberries, blackberries and mint to a mixing bowl.
In a separate small bowl or jar, combine the lemon juice and and honey. Mix thoroughly until the honey has completely blended smoothly with the lemon.
Drizzle the lemon mixture over the fruit. Mix gently, be sure not to damage the integrity of the fruit. Pour into a serving bowl or onto a platter. Garnish with extra mint.
*Stem and pitt whole cherries. I like to leave them whole, however if you prefer, you can halve the cherries and then remove the pits. When you cut the watermelon, be sure and cube it in smaller chunks.
