Chewy Chocolate Healthy Cookie Drops
Those of you who follow me know that I love to bake with chickpeas! They add protein and fiber to some of our favorite treats. Their nutty flavor complements many recipes, and their density lends itself to a favorable texture. Check out my recipes for chickpea blondies and yummy chickpea bread for inspiration!
Now, enter my latest cookie recipe that is chewy, chocolatey, and made of only clean ingredients. The chickpeas not only add to the nutritional value, but they help hold these cookies together in a good way! These treats are perfect for anyone who has a sweet tooth that they can’t kick!
Ingredients
1 can of chickpeas (drained)
2 T unsweetened cacao powder
½ c almond butter
2 T coconut oil
¼ c pure maple syrup;
2 t vanilla
1 t baking powder
½ t salt
Instructions
Preheat oven to 350° and line a baking sheet with parchment paper. Put drained chickpeas in the food processor and process until smooth. Add cacao powder, almond butter, coconut oil, maple syrup, vanilla, baking powder, and salt. Process until well incorporated. You may need to stop the processing and scrape the wall of the processor to ensure all ingredients get mixed in. A smooth dough will form. It may be a little loose, that’s ok! Drop tablespoon-size portions of dough onto the baking sheet. Bake for 18-20 minutes. Allow to cool completely before serving or freezing. Makes a dozen cookies.
