Chocolate Avocado Ice Cream

Dairy-free and refined sugar-free ice cream? Plus it’s full of greens? Yes please!

My chocolate avocado ice cream is the perfect clean but delicious summer treat. Serve it for dessert with fruit on top at your next cookout or keep it in the freezer for those afternoons when you need to satisfy a sweet craving.

My 22-year-old son loves it because it tastes good, but also because he likes getting some healthy fats in his diet. If you’ve got little kids, don’t tell them it’s full of greens and nutrition, they’ll never know! For best results, invest in an ice cream maker. Personally, I’ve had great results from Cuisinart’s 2-quart Frozen Yogurt-Sorbet & Ice Cream Maker.

Ingredients

  • 3 Avocados, peeled with seed removed (3 small or 2 large)

  • 3 bananas, peeled and cut up

  • ½ cup raw honey

  • ¼ c unsweetened cocoa powder

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1-2 cups raw spinach (optional)

  • dash of salt

  • 1 can of lite coconut milk

Instructions

Blend all of the ingredients in a blender until creamy. Place mixture in an ice cream maker and spin until consistency is at desired thickness (I like soft serve!). If you don’t have an ice cream maker, you can place blended ingredients in a glass container and freeze in freezer. Add fruit toppings and enjoy! Serves 8.
