Greens and White Beans Dip

This combination is a nice alternative to hummus with your vegetables. Just a batch of fresh ingredients all blended up! This “green choice” will be the perfect start to your gathering. Plus it’s dairy-free and gluten-free, the perfect combination!

Ingredients

  • 1 14 oz. can while cannellini beans (drained and rinsed)

  • ½ c fresh baby kale

  • ¼ c fresh parsley

  • Juice of ½ lemon (about 2 T)

  • 2 cloves fresh garlic (minced)

  • 1 t salt

  • ¼ t pepper

  • ¼ t cayenne pepper

  • 2 T olive oil plus 1 t for drizzle

  • Fresh herbs and pine nuts for garnish (optional)

Instructions

Place all of the ingredients except the olive oil in a food processor and blend on high until all ingredients are combined. Slowly drizzle in 2 T of olive oil until mixture is smooth. You may need to periodically stop the processor and scrape the walls so all of the ingredients get incorporated. Place in a small serving bowl and drizzle with remaining teaspoon of olive oil. Garnish with herbs and pine nuts. Serve with your favorite veggies!
