Mediterranean Quinoa Salad with Tahini Dressing
A colorful dish full of vegetables with a superfood grain! This salad can be served as a side dish or add a piece of grilled fish on top, like my green pesto salmon with crunchy cashews, and make it a meal!
Ingredients
1 cup dry Quinoa
½ c shredded carrots
1 c fresh baby spinach
1 small cucumber (diced)
1 c cherry tomatoes (halved)
½ c kalamato olives (sliced)
2 T fresh oregano
½ c crumbled feta cheese (omit for dairy-free)
¼ c tahini dressing
Instructions
Prepare quinoa according to package directions. Add all additional ingredients and mix well. Serves 8.
