Yummy Clean Baked Apples
Apple pie meets apple crisp but clean with a creative presentation! When you have a group that craves something sweet at the end of a meal but doesn't want to over-indulge, these baked apples are the answer. I like to serve mine à la mode with a scoop of frozen dessert. Or, you can leave off the topping and serve these for breakfast or as a healthy snack!
Ingredients
6 medium sized apples (I like organic honeycrisp apples)
½ c gluten-free rolled oats
½ c chopped raw pecans
½ c sliced almonds
½ c raisins
2 T Cinnamon
1 ½ T Tapioca starch
¼ c coconut oil
½ c + 2 t maple syrup (divided)
Vanilla coconut milk frozen dessert (Optional, I use So Delicious Dairy Free Dessert)
Instructions
Carve out core of each apple. Leave bottom in tact and use a spoon to make the cavity bigger. Mix together the next seven ingredients along with ½ c maple syrup to make the filling. Make sure coconut oil is worked in well to the mixture. Drizzle half of the remaining maple syrup on the bottom of the apples, fill the cavity with the filling and drizzle the remainder of the maple syrup on the top of the filling. Set the oven to 350°. Cook apples covered in a casserole dish with ¼ inch of water in it for 45 minutes. Make sure it cools until just warm before you put ice cream on it. Serves 6.
